Summer Watermelon Salad with Southwestern Over the Top Crunch

When the summer heats up, try this cool and spicy salad to refresh yourself! Watermelon, jalapeño, scallions, cucumber and avocado join delicious forces to bring you the flavors of the southwest. And Over the Top, The Southwestern, gives you just the crunch and additional spice you need!
Summer Watermelon Salad with Southwestern Over the Top Crunch Recipe

2-3 servings
Ingredients
- 3 cups Seedless Watermelon, small dice
- 1 medium Jalapeño, thinly sliced
- 2 large scallions, thinly sliced, white and green parts
- 1/2 of 1 Hot House Cucumber, sliced in quarter inch thick half moons
- 1 large avocado, diced
- 3 Tablespoons Over the Top, The Southwestern
- For the Serrano Vinegar
- 1 Serrano pepper, split in half, stem intact
- 1/4 cup Sherry vinegar
- 1/2 cup apple cider vinegar
- 2 T honey or 1 T agave nectar
Instructions
- Place vinegars, honey or agave and serrano pepper into a saucepan. Bring to a high simmer and continue to simmer for 15 minutes. Strain and cool.
- Toss all the vegetables together in a mixing bowl, then move to individual salad plates or to a serving bowl.
- Splash with serrano vinegar to taste
- Top with Over the Top, The Southwestern.
- Serve chilled
