Watermelon Salad with Pepita Crunch

Watermelon Salad with Pepita Crunch

Ingredients

  • 3 cups Seedless Watermelon, small dice
  • 1 medium Jalapeño, thinly sliced
  • 2 large scallions, thinly sliced, white and green parts
  • 1/2 of 1 Hot House Cucumber, sliced in quarter inch thick half moons
  • 1 large avocado, diced
  • 3 Tablespoons Pepita Crunch
  • For the Serrano Vinegar
  • 1 Serrano pepper, split in half, stem intact
  • 1/4 cup Sherry vinegar
  • 1/2 cup apple cider vinegar
  • 2 T honey or 1 T agave nectar

Instructions

  • Place vinegars, honey or agave and serrano pepper into a saucepan. Bring to a high simmer and continue to simmer for 15 minutes. Strain and cool.
  • Toss all the vegetables together in a mixing bowl, then move to individual salad plates or to a serving bowl.
  • Splash with serrano vinegar to taste
  • Top with Over the Top, The Southwestern.
  • Serve chilled
