Chili with a Southwestern Twist

This chili recipe has it all - spice, texture, and flavor, all mixed up into one better for your bowl.  It's also a one pot wonder, meaning there's barely anything to clean once it starts to simmer.  Take your new favorite chili over the top...
Chili with a Southwestern Twist

We all have a chili recipe whether handed down or created ourselves.  This particular recipe is a crowd favorite since it is allergen friendly and FLAVORFUL - just the right amount of heat.  We love it with a sprinkle of Over the Top for the signature crunch, pepitas and additional spices; you will, too!

Chili with a Southwestern Twist

Servings:1-2 cups. Recipe yields 2 quarts

Ingredients

  • 1 large sweet yellow onion, small dice
  • 4 cloves garlic, finely chopped
  • 2 stalks celery, halved and thinly sliced
  • 2 Hatch or Anaheim chilies, roasted and diced
  • 1 large serrano pepper, diced
  • 4 chipotle "sausage" from Field Roast (or chorizo)
  • 1-2 Tablespoons chipotle purée from a can of chipotles in adobo
  • 28 oz can diced tomatoes with juice
  • 16 oz vegetable stock
  • 14 oz can black beans, drained
  • 14 oz can garbanzo beans, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Kosher salt to taste
  • avocado oil - as needed
  • Optional: 1 cup corn kernels, either fresh or thawed

Instructions

  • In a Dutch oven or stock pot, heat 1-2 T avocado oil over medium high heat. When oil begins to shimmer, add the chopped onion, garlic and celery. Cook until softened and onion is translucent.
  • Add spices with the chilies, serrano pepper and cook an additional three minutes.
  • Add both beans, chipotle sausage and chipotle puree and stir well to combine.
  • Add stock and tomatoes, combine well, then bring to a high simmer. Cover and cook for 20-30 minutes, stirring occasionally.
  • Remove lid carefully, taste and adjust seasonings.
  • Serve with chopped green onions and Over the Top Southwestern.
Notes
Can be made up to two days ahead. May be frozen up to three months.
