White Chocolate Strawberry Blondies

These blondies come together in minutes and you can finish them a variety of ways. Personally, I love the white chocolate drizzle and the extra granola on top, but you could just eat as is - haven't heard any complaints; guess everyone's mouth was too full!

Chef confessions - I have been a fan of white chocolate since I was little and had an allergy to dark chocolate. Thankfully, I outgrew that allergy but my love for white chocolate has never waned.  Creating White Chocolate Strawberry Crunch may have been a little self-serving, but at the end of the day, does it really count as self indulgence when you share?  These blondies come together in minutes and you can finish them a variety of ways. Personally, I love the white chocolate drizzle and the extra granola on top, but you could just eat as is - haven't heard any complaints; guess everyone's mouth was too full!

White Chocolate Strawberry Blondies Recipe

Servings: 1 square - recipe yields 16

Ingredients

  • 4 oz/1/2 cup unsalted butter, melted (plant-based butter may be subbed)
  • 1 cup/220 grams golden brown sugar, packed if measured in cup
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • big pinch kosher salt
  • 1 cup/128 grams all purpose flour (gluten free can be subbed)
  • 1 cup/100 grams White Chocolate Strawberry Granola
  • 1/2 cup/70 grams white chocolate chips
  • 1/4 cup/40 grams white chocolate chips, melted, for drizzling
  • 1/4 cup/25 grams White Chocolate Strawberry Granola, for sprinkling

Instructions

  • Whisk the melted butter with the brown sugar until smooth.
  • Add the egg and vanilla and whisk to combine.
  • Combine the flour, baking powder, baking soda and salt together. Add to the butter/sugar mixture.
  • Fold in the granola and the white chocolate chips.
  • Spray and 8 x 8 square baking pan. Line with parchment and spray parchment, if desired. Spread batter into pan and place in a preheated 350 degree oven.
  • Bake for 22-28 nminutes. Test with a toothpick in the center.
  • While blondies are cooling, melt the white chocolate in short spurts of 15 seconds in the microwave.
  • Cut the blondies into even squares and move to a serving dish. Using a small spoon, drizzle the white chocolate over the blondies then top with the White Chocolate Strawberry Granola.

Notes

350 Conventional for 30 minutes or 325 Convection for 25 minutes. Store at room temperature up to one week. May be baked and frozen.
