Over the Top Prosciutto Wrapped Marinated Ciliegine and Tortellini Skewers

Whether you are hosting a party or invited to attend, this easy to make ahead skewer of cheese tortellini, marinated ciliegine (bite sized mozzarella balls) and prosciutto, with a little Over the Top Italian will definitely take the hors d'oeuvres next level. If you can't find ciliegine, cut up a standard mozzarella log/ball into smaller chunks.
Over the Top Prosciutto Wrapped Marinated Ciliegine and Tortellini Skewers Recipe

2-3 skewers, Recipe yields 16 Skewers
Ingredients
- 10 oz cheese tortellini, cooked according to package directions
- 1/4 cup sun dried tomatoes in oil, julienne
- 8 oz container of ciliegine, drained
- 1/4 teaspoon dried oregano
- 2 T olive oil
- 1 T crusted Calabrian Chilies
- 2 T Over the Top Italian by Laura's Gourmet
- 3 oz Prosciutto, thinly sliced
Instructions
- Heat a small sauté pan over medium high heat. Add olive oil and sun dried tomatoes with oil to the pan and toss to combine. Add the dried oregano and Calabrian chilies and simmer over low heat for 3-4 minutes. Remove from heat and allow to cool in a medium sized mixing bowl.
- Once mixture has cooled, add mozzarella and Over the Top. Taste and adjust seasonings. Marinate mozzarella at least 10 minutes or overnight.
- Lay prosciutto on a flat surface and carefully slice in half lengthwise. Taking one ciliegine at a time, roll up in prosciutto and hold on a plate or sheet tray. Repeat with remaining ingredients.
- To make the skewers, carefully slide one tortellini onto each skewer. Add a prosciutto wrapped ciiegine to the skewer, followed by another tortellini. Repeat with remaining tortellini and ciliegine.
- Place on a serving platter and sprinkle additional Over the Top Italian over platter. Serve chilled.
Notes
