Breakfast Panna Cotta (aka Decadently Delicious Parfait)

Panna cotta for breakfast? Yes, please! This make ahead dish easily makes for a unique breakfast, brunch or dessert item.  So creamy, so cool, so yum!
Breakfast Panna Cotta (aka Decadently Delicious Parfait)

You say "parfait", we say "panna cotta".  Italian for "cooked cream", this brekkie panna cotta takes breakfast, brunch or dessert to a whole new level.  Move over, "table pancake"... panna cotta is ready for its delicious closeup.  Best part? You can make this up to four days ahead and love every creamy bite!

Breakfast Panna Cotta (aka Decadently Delicious Parfait)

Servings:8-10 servings

Ingredients

  • 2 cups (16 oz) heavy cream
  • 1 1/2 teaspoons gelatin
  • 1 1/3 cups vanilla bean or plain yogurt
  • 1 1/2 teaspoons vanilla extract or vanilla bean paste
  • 1 T maple syrup
  • 1/3 cup sugar
  • Laura's Gourmet Granola - Your FLAVOR of CHOICE
  • Fresh Berries

Instructions

  • Place 2 tablespoons of cold water in a small bowl. Sprinkle gelatin over water and set side for 10 minutes.
  • In a saucepan, place 1 cup (8 oz) cream and the sugar and bring to a simmer. Whisk to ensure sugar dissolves.
  • In a large bowl, combine 1 cup of cream, yogurt, vanilla extrac and maple syrup and whisk well to combine.
  • Pour the hot cream/sugar mixture over the cold cream mixture and whisk well to combine.
  • Pour into a 9 x 12 inch baking dish, cover with plastic wrap and chill at least five hours or overnight.
  • To serve: cut into portions and place a "slice" in the bottom of a parfait glass or serving glass. Top with fresh fruit, repeat, then sprinkle with Laura's Gourmet Granola.
Notes
You can also portion the mix into sprayed ramekins or portion cups. Once it is set, you can "flip" it onto a serving plate for a more dramatic presentation.
