Dark Chocolate Crunch Peanut Butter Protein Bites

These Dark Chocolate Crunch Peanut Butter Protein Bites from the kitchen of Chef Laura, owner of Laura’s Gourmet Granola, will hit the spot every time. Created to energize you and not weigh you down, each satisfying bite provides some quick protein wrapped up in the powerhouse of everyone’s favorite flavor combination, chocolate and peanut butter. Use whatever plant-based protein you like if you need to keep this recipe vegan. Since there’s already hemp protein in the granola, you get a trifecta of protein from the granola, peanut butter and powder. Plus, since this recipe is “no bake”, you’ll be done making them in no time at all!

Plant Based Protein Powder (pea, hemp, etc) | .65 oz/18 grams/2 T |
Deglet Dates, Pitted | 4 oz |
Peanut Butter | 4 oz |
Kosher salt | Pinch |
Dark Chocolate Crunch, crushed | For rolling |
Instructions
- Place Dark Chocolate Crunch, protein powder, dates, and peanut butter into a food processor. Pulse until smooth. Taste and season with salt as needed.
- For Lékué Silicone Molds: Portion into individual balls, then press firmly into mini bite molds. Refrigerate at least an hour, then “pop” the bites out of the molds.
- For balls: Using a 1 Tablespoon portion scoop, shape into individual balls, rolling in the crushed granola. Repeat.
- Bites may be stored at room temperature for a week, or frozen up to three months. Thaw before enjoying
